I am probably just about the laziest person ever when it comes to the kitchen. With busy nights, often cooking for one (my husband basically gets all of his meals catered at work, must be nice!) and having to fit in grocery shopping, it’s a miracle if I don’t drive through Taco Bell every night. Being healthy, fast and easy is not a simple feat, but I’ve learned some quick and oh-so easy meals that are good for both my schedule and my body.
Gnocchi and Pesto – Literally two ingredients: Cappello’s Pasta and pesto sauce, which I buy both through Amazon Prime now. Ummm, could this get any easier? No, it could not. Also, this meal is surprisingly CLEAN, the gnocchi is even Whole30-approved and the pesto only has five ingredients. You honestly can’t even tell the difference.

Chicken Salad – I love making this for myself to take for lunch or even to have as a dinner with some garlic bread (the bread isn’t that healthy, but it’s called balance, people). All you need is a kale salad mix, a rotisserie chicken, some avocados, tangerines and a yummy dressing. I love Tessemae’s!

Zucchini Noodles – Another meal you can make totally and completely from Amazon Prime now. I purchase pre-cut zucchini noodles (because nobody has time to zoodle anything), ground beef and tomato sauce. You are welcome to make your own, but I buy mine pre-made because again, I am lazy in the kitchen!

Salmon and Potatoes – I love these packaged salmon fillets that I get from Whole Foods. I keep them in my freezer and tear off one when I want to make it! I drizzle olive oil, salt, pepper, dill and lemon and bake it in the oven for about 12-15 minutes at 450 F. I love to pair salmon with any version of Alexia potatoes—seriously the BEST frozen potato brand I have come across. Easy, healthy and delicious!

Tacos – I know, how unoriginal. Making tacos is so easy and so great for leftovers the next day. I like to use a rotisserie chicken or ground beef for the filling, Siete tortillas for the shell, and then add in avocados, limes, tomatoes, etc., for toppings!
