A Sweet + Healthy(ish) Valentine’s Day Parfait

Valentine’s Day is my favorite holiday. The other day, Taylor asked me why and I told her, it’s because it’s the one day of the year that the rest of the world gets on board with my aesthetic 😂. I love the classic Valentine’s color scheme. When thinking of what kind of festive Valentine’s treats I wanted to whip up this year, I decided on a Neopolitan. If you live in California, you’ve likely tasted the magic that is a Neopolitan shake from In-N-Out Burger. But we’re still working on maintaining healthy resolutions over here, so I decided to go with something healthier and lower in sugar.

Neapolitan Valentine’s Day Parfait

What you’ll need:

  • Fresh raspberries
  • 1 1/2 cups plain Greek yogurt
  • 2 teaspoons cacao powder
  • 2 teaspoons vanilla extract
  • 1 14 ounce can coconut cream or full fat coconut milk (chilled in the fridge overnight)
  • 1/2 cup powdered sugar
  • pinch of sea salt
  • fresh mint for garnish

1. Step 1

In a medium bowl, mash 1/2 cup of raspberries with a fork. Add a few tablespoons of Greek yogurt to the bowl and mix to combine.

2. Step 2

In a separate bowl, combine the cacao powder with a few tablespoons of yogurt and 1 teaspoon of vanilla extract. Stir to combine. Taste and adjust sweetness levels based on preference.

3. Step 3

Add remaining teaspoon of vanilla extract to remaining yogurt, stir to combine and set aside.

4. Step 4

To make the whipped cream, add the chilled coconut milk and powdered sugar to a bowl and beat with an electric mixer until smooth and creamy.

5. Step 5

Here’s where you can decide how fancy you want to be. You can spoon a layer of each yogurt into your glass, or you can pipe it. I filled four Ziploc bags with the yogurts and whipped cream, and cut off the corner so I could pipe it into the glass. Layer the raspberry yogurt, a layer of fresh raspberries, the chocolate yogurt and a final layer of the vanilla yogurt. Add a final layer of the coconut whipped cream and garnish with raspberry and fresh mint.

So, you can enjoy your Valentine’s treat without a complete sugar coma, plus enjoy the benefits of coconut, raspberries and antioxidant-rich cacao.
