One of my favorite things about working from home is being in charge of my lunch. Forget a complicated homemade lunch, I’ve collected my favorite go-to recipes for an easy, filling lunch hour with items I already have. The best way to go about work-from-home lunches is to prepare ahead of time, keep it simple and make it yummy! Because you’re in your own home, it’s easy to get your hands on leftovers, and fresh ingredients.
Turkey Bacon and Avocado Grilled Cheese
I will never turn down a gourmet grilled cheese. I usually use this recipe, but sometimes I add or take away different ingredients as well. It’s easy to make, and very delicious!
This is the perfect recipe for meal preppers! Sometimes all I want to do is stick something in the microwave or oven. Or, if you just celebrated Taco Tuesday, then be sure to save the leftovers, and easily recreate this meal.
BLT Chicken Salad Lettuce Wraps
I love the spin on the original BLT for this. Sometimes I skip the chicken and use tuna instead.
If you’re feeding your kids during lunch as well, this is a great recipe that you can all enjoy. I like to add chips as well sometimes.
I’ve got a hack for this: make a big batch of chicken salad and you can use it in so many other lunches.
Spicy Buffalo Honey Mustard Sandwich
This is totally not your average hot ham and cheese sandwich. I make this a lot. My boyfriend and I like to add a side salad to it.
What’s better than takeout? A homemade pizza. You can use pre-made pizza crust, but I really like to use this recipe with Trader Joe’s seasoned pizza dough.
This recipe will ensure you never have another boring salad! The best way to change up a go-to salad is by topping it off with a different dressing.
Better Than the Blue Box Mac & Cheese
Who doesn’t love a hot lunch?! You can easily make a batch of this the night before and enjoy it for the next few days.
These are so refreshing and easy to make when you forgot to pre-plan your lunch.
