10 Healthy Meal Prep Recipes To Motivate You To Eat Better

We’re big fans of meal prep around here. With busy work schedules, crazy kiddos running around and everything in between, cooking full meals every day is tricky. Some days I’m lucky if I eat more than a protein bar before 4 p.m. But meal prep is a lifesaver for maintaining healthy habits and making sure there’s always something nutritious to eat. A girl cannot live on iced coffee and almonds alone—trust me, I’ve tried. Here are a few of our favorite meal prep recipes that are healthy, yet totally delicious.

Thai Coconut Quinoa Bowls

This one is for all my fellow vegetarians. These bowls are made with roasted veggies, a delicious slaw, homemade coconut quinoa and a yummy peanut sauce.

 

Fruit + Yogurt Parfaits

There is something so simple and yet so satisfying about fruit and layers of creamy yogurt topped with crunchy granola. It’s the perfect breakfast or mid-morning snack.

 

Greek Couscous Salad

You can top this with grilled chicken if you want some extra protein, or leave it as is if you’re a vegetarian.

Meal prep sushi?! You read that right. This deconstructed California sushi roll is served with cauliflower sushi rice and is packed with healthy ingredients.
